Abstract for Post: Identification of Anthocyanin from Blackberry Fruits in Japan

In the present study, we have identified cyanidin 3-glucoside from blackberry fruits extracts. The compounds were separated by preparative HPLC after purification. The structures of the compounds were confirmed by high performance liquid chromatography (HPLC) and nuclear magnetic resonance (NMR) spectroscopy. Cyanidin-3-glucoside is the major anthocyanin detected from blackberries. This new pigment family adds to the growing body of data supporting the use of natural colorants in food.
